Chocolate Crisp Protein Bars
Ingredients:
1 cup of dates
1 cup of almonds or nuts of choice
1 scoop of chocolate protein powder (optional)
1.5 cups of soy protein crisps
3 tbS of dark cocoa or cacao powder
2 tbS maple syrup
2 tbS peanut butter or nut butter of choice
Topping > 1/2 - 3/4 cup of dark chocolate and 1-2 teaS of coconut oil
Method:
In a blender combined dates and almonds. Blend until well combined and mixture resembles a paste consistency.
Tip: If you don’t have a blender, almond meal will work just fine.
In a large bowl, add date and almond mixture. Add rest of ingredients and mix until well combined.
Line a slice baking tray with baking paper. Press protein bar mixture into tray.
In another bowl, place the dark chocolate and coconut oil. Place bowl in the microwave and cook in 30 second increments or until chocolate is melted.
Spread melted chocolate over top of protein bar mixture. Place tray in the fridge to set.
Once the chocolate is set, slice into even squares. Store in the fridge or freezer.
