Chocolate Bounty Oats Bars
Ingredients:
1.5 cups of rolled oats
2 x small ripe bananas
2 x tbS chia seeds
150ml of milk (I use FC cow’s milk)
3 tbs cacao powder
1/2 cup of shredded coconut
1 tsp baking powder
2 x rows of dark chocolate (chopped roughly)
1 tbs of maple syrup (optional)
Topping:
1 tsp of coconut oil
4x squares of dark chocolate
Shredded coconut
Method:
1. Preheat oven to 180 degrees. Light spray bar moulds with extra virgin olive oil.
2. In a bowl, mash bananas well. Add all wet ingredients to bowl and mix well.
3. Add all dry ingredients except the dark chocolate to a bowl and mix well. Once well combined fold through chopped chocolate.
4. Scoop mixture evenly into mould and place in the oven for 20-25 mins or until fork comes out clean.
5. Let bars completely cool, option to melt 4x squares & coconut oil in a bowl. Drizzle melted chocolate over bars and top with shredded coconut.
Enjoy as is or slightly warmed. My favourite is slightly warmed with Greek yogurt & fresh berries 🫐
