Fresh out of the oven. These oat, raisin & pecan cookies are golden, chewy, and just the right amount of spice. They’re the perfect one-handed snack for a busy postpartum mum.

Bonus 👉🏻 they’re freezer-friendly and ideal for grabbing between feeds!

Ingredients
• 2 eggs, room temperature
• 100g coconut sugar
• ½ cup butter, melted
• 140g rolled oats
• 200g almond meal
• 2 tsp cinnamon
• 1 tsp baking soda
• ½ cup sultanas or raisins
• ½ cup chopped pecans

Method
1. Preheat oven to 180°C.
2. Whisk together coconut sugar, melted butter, and eggs.
3. Add oats, almond meal, cinnamon, baking soda, raisins, and pecans and mix well.
4. Scoop 1 tbsp of dough, roll into balls, and press lightly onto a lined tray.
5. Bake for 20 mins until golden.
